Muffin Monday is back ... low GI style!
Snacks and Treats for Sustained Energy (its available on amazon as well) but when I searched online I found a similar recipe here - I used regular chocolate chips.
And instead of baking them in a muffin pan I used a mini loaf tin. Its very cute and the muffins are very good ... and are just over 600kj per serving.
PS Ben now has the gastro from last week so he is at home today ... but he is coping with it so well, just shows how fast these children are growing up.
