We have been buying hummus lately, I don't usually eat it, but the rest of the family does ... well today I decided it was time to try making it ... it was SO EASY and its delicious! Here is the recipe I used, its a blend of a few recipes.
If you haven't tried hummus before its a middle eastern dip or spread made from cooked, mashed chickpeas.
410g tin of chickpeas -drain & rinse
200g bag of Pimiento stuffed olives (100g drained) drain
1 tsp minced garlic
4 Tbs olive oil
3 Tbs lemon juice
1/2 tsp dried basil
4 Tbs water
salt a pepper to taste
Liquidise all the ingredients (I used the water to loosen the mixture in the food processor)
Serve with crackers and vegetable crudites
