Load shedding Taco Potatoes

Ahhh ... load shedding.

A new way to throw me off my game! Some days you know there is going to be load shedding and others you don't, its a gamble really. Sometimes they will change the stage from 1 to 2 (or 3 eek!) during the day ... and just when you least expect it =SUPRISE= no electricity :(

So tonight was one of those special surprise nights ... the electricity goes off from 5pm - 6.15pm.

My biggest dilemma is what do you make for dinner in a few minutes once the electricity comes back on?

well here is tonight's special (this meal took me 18 minutes to make) :

Load shedding Taco Potatoes (feeds 5-6) 

You will need:
2 x All Joy Baked Beans and Soya Mince  (in a can)
Cape Herbs Taco Spice
6 x Potatoes (add more to feed more people)
Salad ingredients

  1. Pierce the potatoes and bake in the microwave, mine took 12 minutes to bake 6.
  2. Chop the salad ingredients, grate the cheese, set aside
  3. Open the can of beans and soya mince, place in a glass microwave dish, add I heaped teaspoon of taco spice per can. Warm in the microwave for 5 minutes
  4. Cut open potatoes, top with bean mixture, salad and cheese.
